Chipotle Clone Fajita Drone (vegan, gluten free)

– 4 cups brown rice
– I package of tofu
– 1 can sweet corn
– 1 can black beans
– 1/2 medium green bell pepper
– 2 haas avocados
– 1 small jalapeño
– 1/2 cup diced onion
– 1/8 cup orange juice (I use Uncle matts!)
– 1/4 cup minced garlic
– salt and pepper (optional: adobo, paprika, adobo, bay leaf, cumin, fajita seasoning
– 1 lemon
– 1 lime
– coconut oil
– Optional: gluten free tortilla wraps/ tortilla chips
{* keep in mind these are merely approximations, you may use more of less. Also feel free to improvise, you don’t need every little thing for it to taste great! Get creative!}

1. Brown rice: bring rice and water to a boil (1:2 ratio/rice:water) and reduce to low/medium heat covered for 35 minutes
2. Drain tofu and press dry with paper towel. Cube the tofu and season in a bowl to preference (I put 1/8 cup of orange juice, 1/8 cup minced garlic, onion powder, 3/4 tbs salt, pepper, paprika, garam masala, adobo). Mix well. Cook in skillet with 3/4 tbs of coconut oil (or any oil really)



3. Slice bell peppers and sauté with coconut oil (brown on edges when done) then season with oregano (finely chopped), black pepper, and a pinch of salt


4. Rice should be done (You’ll see holes in it). Squeeze half a lemon into the rice, 3/4 tbs of salt and 1 tbs of olive oil. Stir and then spread out on to a pan to cool and place in the freezer for 5 min (If you have more time just cool it in the fridge for 25 minutes in a bowl) *dont skip this step or when you add the cilantro it will not taste as fresh and can burn from the heat of the rice
5. Corn salsa: Add corn, 1/8 cup of cilantro, 1 small jalapeño diced, 1/8 cup of diced onion, half squeezed lime and 1/2 a squeezed lemon and a couple pinches of salt. Mix thoroughly.
6. Get the rice out of freezer and back in the pot and add 1/4 – 1/2 cup of chopped cilantro. Mix.

7. Black beans: Empty contents into pot over medium heat. Season with bay leaf, cumin, 1/2 squeezed lemon and 1/2 squeezed lime, oregano, salt, pepper and fajita seasoning.

8. Guacamole! (Add ingredients to preference) Peel and mush two haas avocados, 1/4 of a diced tomato,minced garlic, onion, lemon, lime, jalapeño, cilantro and salt
9. Make your bowl and devour! Optional: line bowl with gluten free tortilla (heat tortilla on each side in a skillet on medium/high heat for 30 second on each side)
